Pita Bread With More Pop

I really like the King Arthur Flour company, I think they make a great product, and I like their Baker’s Banter blog as much as I like their flour. Over the weekend I made a batch of homemade hummus and decided to make some pita to go with it. Pita is surprisingly easy to make, but it is sometimes tough to get the pita to pop. I posted a recipe for pita bread a while back.

It is a good thing I checked the Baker’s Banter Blog before I started. They had a post on getting more pop out of your pita. A technique that a commenter recommend involves baking the pitas directly on the oven racks. It is a little tricky to get them on and off the racks with out burning yourself though. If you use baking rakes you can easily lay the pitas on the rack and then just place the rack in the oven. This method makes it really simple, and if you have enough racks you can have the next batch ready when first batch finishes. As an added bonus, you get a cool hash mark on the bottom.

With this great technique there is no reason for not giving pitas a shot. They have to be one of the easiest and quickest breads out there. All it involves is kneading a basic dough, waiting an hour, then rolling out a couple rounds and baking. Give it a try!
