Easy, Overnight Yeast Waffles

After trying overnight yeast pancakes, I thought I would give their buddy waffles a try. Overnight waffles are just as easy as the pancakes. As a bonus, the yeast makes them nice and light, and gives them a nice crust.

I cobbled together two different recipes (Red Star Yeast & The Fannie Farmer). The big difference is that the Fannie Farmer recipe calls for beating the eggs and adding them in the morning.

Overnight Yeast Waffles

Ingredients:

  • 1 3/4 cups milk
  • 1/4 cup water
  • 1/4 cup butter, melted and cooled
  • 3 eggs
  • 1 tsp salt
  • 2 tbs sugar
  • 2 2/3 cups all purpose flour
  • 1 tsp yeast (active dry or instant)

Directions:

  1. Combine flour, yeast, sugar and salt in a large bowl, mix to combine.
  2. In a separate bowl, beat eggs and then stir in the milk, water and butter.
  3. Add the liquid ingredients to the dry ingredients. Mix, by hand or with a mixer, until well combined.
  4. Cover and refrigerate overnight.
  5. Remove in the morning. Allow the batter to warm to room temperature if possible.
  6. To make waffles, pour the batter into a pre-heated waffle iron.
  7. Serve with butter and maple syrup.

    Wow. This might give me a reason to go out and get a waffle iron. Reminds me of mornings sitting at the counter, as mom made waffles. Eating them straight from the iron.

  3. I love anything that I can throw in the fridge and then whip up in the morning. i love the luscious color these waffles take on!

    Hi Nick, I actually didn’t try the two different recipes. I combine the liquid and dry ratios from the red star, but used the butter from the other recipe. They are both very similar though and should work well.

    Hi Halle, I found that the waffles tasted too yeastie with the full packet. If you let the waffle batter sit overnight, the 1 tsp will have enough time to create enough rise. Try experimenting though! Both amount should work. Report back on how the 2 1/4 tsp works.

    i noticed that you reduced the yeast to 1 tsp from the original 2 1/4 tsp on the Red Star Yeast recipe. Is there a reason for this? I’m just a little bit confused and I’m not sure which recipe to follow.
