BBQ Chicken Sandwich

This is one of the many dishes I made from a big batch of poached chicken I cooked up earlier in the week. It is an original creation that I sort of threw together, and it turned out great. I wanted to pair the sandwich fixings with the flavor of the BBQ sauce. I added thin sliced apples, gouda and red onions to match the sweet, spicy, and savory flavors of the sauce.

Ingredients:

  • Granny smith apple
  • Red onion
  • Poached chicken breast
  • Gouda
  • Ciabatta bread
  • BBQ sauce

Directions:

  1. Cut the poached chicken breast into 1/4″ thick slices. Throw them into a container, add BBQ sauce and toss to coat.
  2. Slice ciabatta in half horizontally. Cut enough gouda slices to cover the bottom half of the bread. Toast both halves to melt cheese and brown bread.
  3. Thinly slice the onion. Core and peel the granny smith apple.
  4. Place the apple on the bottom half of bread. Add the chicken and then the onion. Add some extra BBQ sauce if things look dry. Cover with the top half of the bread. Cut the sandwich in half vertically to get the sandwich to the right size and Enjoy!

  2. Wow, very good recipe! I did not have the ingrediants for cole slaw, and my husband is traveling so I didn’t want to make a big batch. The apple replaces the sweetness of the slaw perfectly, and with the raw onions it gives the perfect amount of texture. I didn’t have Gouda so I used something similiar to American Swiss cheese.Thanks for an inspiring recipe.
