Further experiments in Pancakes

I made another batch of overnight yeast pancakes last weekend and they came out great again. Of course I had to play with the recipe a little. I used only 1tsp of instant yeast. There was definitely less of a yeast taste in the pancakes, but they still had no problem rising. So if you want a little lighter yeast taste, drop it down to 1tsp.

I also got adventuresome and used half all-purpose flour and half white wheat. White wheat is a lighter variety of whole wheat, whole big story about it here. I used King Arthur’s version. I think it came out great. They were not too heavy or dense, but had a little wheatier flavor. It had a real nice balance.
