I am a big fan of simple recipe that relies on the quality of the ingredients to do all the work. This is because I am a lazy bastard. We picked up some ripe, juicy tomatoes from the farmers’ market and simply diced them and dressed them with salt, vinegar and olive oil. We added some minced scallion and then let it marinate for a little. Anything more than this would have had diminishing returns. Take it from the lazy cook–good vegetables are tastier, which means less work.

The more care taken in finding the right ingredients, the better the end product will be.
