This is a lot like my favorite weekend breakfast! Instead of english muffins, I dice a potato into little quarter inch cubes, rinse them, pat them dry and season them with garlic and onion and basil and fry them up. Then I top with my over easy egg. mmm. (I have to admit I add ketchup to my homefries... ew, I know but I just love it lol) But salsa sounds great... or jam... or hot sauce...

Reminiscent of my childhood breakfast on the go... Instead of the fried egg, we scrambled and added home made strawberry jam, topping it off with the other half of the english muffin. Thank you for the yummy reminder of comforting times !
